The pump operates with low pulsation and is self-priming, dry-running safe and self-draining down to the last drop. The fast-priming geometry of the impeller enables air removal, which improves the brine. This means that full pressure is available at the needles from the first stroke within the selection range between 0.3 and 4.2 bar, which in turn enables accurate injection volumes from 3% to 80%. ------------------------------------------------------------------------------------------------------------------------ SINGLE NEEDLE CONTROL As soon as a needle hits the surface of the meat, the fluid intake opens. If the needle hits bone, the fluid intake closes to prevent too much fluid collects in one place. When the needle penetrates the flesh without encountering bone resistance, the fluid is injected until the needle comes out on the underside of the meat. This way the brine is distributed evenly throughout the piece of meat. ------------------------------------------------------------------------------------------------------------------------ SUPERIOR HYGIENE Every part of this machine is designed for quick cleaning. A blade suspension system allows for processing of meat with bones. During the process of cutting through the fibers, the meat structure softens, which activates actomyosin – The meat's own tenderizer. The result is increased fluid retention and more tender meat.
